LONG TIME NO SEE

Oh hey y'all, what's new?  I'll tell you what's new with me - a shit ton of stuff, that's what.  Let me just recount the major points of what has happened in the past 10 days...
  1. I started a part time job locally as an office assistant/secretary.
  2. I got hired at iFly in Orlando, so now I commute an hour to the best job ever.  I mean, come on, now my indoor skydiving addiction is my career!
  3. Still working in theatre (also my career) on the production of Cabaret - opening in two weeks!
  4. Let us take note that, so far, this means I'm juggling three jobs.
  5. My sister is here!!  Spring break for her means she's come to visit!
  6. Tomorrow morning we leave for NYC!  We'll be gone tomorrow through the end of the week and back on Saturday morning.
 This means I won't be posting a ton for the next couple weeks, at least until Cabaret finishes, but I will definitely have some awesome posts from New York in the next week!  SO EXCITED GUYS!!!

DAYTONA BIKE WEEK 2014


Last year, my spring break in Florida just so happened to line up with Daytona Bike Week 2013 (that old post here).  Well, as I am back in Florida this spring, I definitely wanted to go back to Daytona Beach for Bike Week 2014!  So on Thursday, after work, I put on my leather leggings and hopped in the car for the drive east.

FOODPORN = THIS


Prepare your ears...

Sweet potatoes.  Stuffed with quinoa.  Kale.  Sauteed onions.  Almonds.  And cranberries.

Ladies and gentlemen, if there's one thing better than foodporn, it's this.  This is more than just porn.  This is true love.  With the sexiest food on the planet.  I almost feel like I'm taking this too far now, because it's starting to feel a bit weird, but suffice it to say, this was damn good and fairly healthy.  And because I love this, and I love the world right now, I'm sharing it with you, person reading this blog post.  Enjoy.  You can thank me later.

I went off of this recipe I found on Pinterest.  Now, the recipe doesn't explain step by step instructions in detail, which for someone like me where the term "amateur" in the kitchen is too high a regard, leaves a lot to be desired.

I'll just say for those who are not as savvy in the kitchen (read: people who need detailed instruction manuals (read: me)), the steps I took to achieve all necessary parts of this meal.  Or you could just google each step, like I did, but now I've put it all here for you in one convenient spot!

For the sweet potatoes:
  • wash them in the sink and scrub all the dirt off
  • dry thoroughly with paper towels
  • stab them all over with a fork (if you have any aggression, here's a good chance to take it all out)
  • put them on a foil lined baking sheet
  • bake at 350 for 1 hour, turning them over at the halfway point
For the quinoa:
  •  rinse quinoa in a strainer (obviously one that doesn't have big holes because hello, quinoa is TINY)
  • make sure it's somewhat dry-ish, then put in a saucepan with your veggie broth and bring to a boil
  • once it's boiling, turn the heat down to low heat so it simmers for about 15-20 minutes (or until the broth is absorbed and the quinoa is light and fluffy
  • take off the heat and fluff with a fork
 For the other stuff:
  • put a saucepan on the stove at medium-high heat
  • once the pan is hot, pour in your olive oil and woosh around (carefully - hot oil hurts like a bitch, or so I've heard)
  • put in your onions and consistently move them around or flip them (again, carefully, because hot oil) until soft and starting to golden
  • add kale, cranberries, and almonds
  • when kale gets a bit darker and softer, add quinoa
  • take off heat and mix together (at this point I put it all in a bowl and added a little sliver of butter here rather than cooking the onions with both oil AND butter)
Slice open your 'taters, stuff with the goodies, and enjoy!  I put some in tupperware containers for tomorrow, and for which I am very excited to enjoy all over again.  :p

SPAGHETTI SQUASH PIZZA


Who said pizza can't be healthy?  Ladies and gentlemen, allow me to present a pizza that is absolutely all veggies and cheese (and a little prosciutto because MEAT).  Say hello to the Spaghetti Squash Pizza Crust!  I swear to any and all gods, this tastes amazing.  Just like a bread-crust pizza, except better because it's vegetables.  And also, spaghetti squash is amazing.  Allow me to share the recipe...

BOROUGH MARKET


Heyo, say hi to my sister in the first photo, because this post comes all the way from back in June of last year, when my sister came to visit me in London!  Yeah, I know, I suck at keeping up with stuff.  That is not new information, and to be honest, it likely won't change anytime soon.  It's who I am, so love it or leave it.  :p  Now, this is going to be a short and sweet post, though I assure you that Borough Market is anything but short and sweet.  Okay, it's sweet among other things, but my point is that you could spend all day there, and this post doesn't feel like it does that justice, but that's what I get for posting this about nine months late, sooooo...

CLEARWATER BEACH


I'm not shy to admit that I'm quite particular about certain things.  Some may call it perfectionism, some OCD, and others might just call me crazy.  But normally, when I post on this blog, I tend to write all the text together and follow it with photos.  All those photos are posted in an order that illustrates the story.  However, today, for this post, I'm going to switch it up and write bits and pieces between the photos - hence the perfectionism/OCD/crazy thing.  I like continuity, I like symmetry, I like consistancy... this new order of things is putting all that in the bin.  And that, folks, is crazy to me.  A change in routine, ahhhh!!  Anywayyyyyyy... moving on to the actual point of this post now, but for whatever reason, I felt the need to type out this whole first disclaimer paragraph.  Y'all probably don't care.  Right.  Moving on.
